Indigenous Yeasts
This wine expresses the desire to make a Touriga Nacional from old vines. In a region where the old vineyards are made up of a wide range of grape varieties mixed in the same plot, in 2009 we decided to harvest from a single 80-year-old vineyard, which implied making a selection of Touriga Nacional in the large set of grape varieties in that plot . From this highly selective harvest, a classic Touriga Nacional was born, where the entire winemaking process was developed for the privilege of exceptional raw material, not using any type of yeast, industrial enzymes or corrections.
It is born from manually harvested grapes. Fermentation is done with indigenous yeasts in a cement vat with one-month post-fermentative maceration. The aging takes place in 225 liter French oak barrels for 18 months.
