Branco em Curtimenta

We have recovered a technique that has always been used at Casa da Passarella in the production of white wines, although it is a method commonly used for red wines. Curtimenta consists of skin contact during the fermentation process, and in the case of this wine we decided that it should take place in a cement vat.

This ancestral technique produces wines of great character, personality and differentiation.
